
Sausage hotpot

- 5 vegan sausages
- 1 tablespoon ketchup
- 6 medium potatoes (or 3 potatoes and 2 sweet potatoes)
- 1 medium onion (chopped)
- 1 tin baked beans, 420g
Par-boil the potatoes, then thinly slice. Fry or grill the sausages, then cut into inch-long pieces. Fry the chopped onion until lightly browned, then add the beans, ketchup and sausages. Pour into casserole dish. Cover with layers of potato, dot with margarine. Bake for around 40 minutes at 200C. Serve with steamed broccoli or peas. Serves 2.
